Explanation:

Proteins are made up of several polypeptide chains linked by hydrogen bonds, and peptide bonds among their amino acids subunits.

At elevated temperatures, the hydrogen and peptide bonds are cleaved resulting in change in conformation of the protein. At this point, cooling DOES NOT renature the protein, as its bonds have been broken.
