It is about the maximum number of different items that your brain can grasp at the same time easily, and this averages to 7. So it mostly applies to the seven bullet animations, since the other examples are not about information presented at the same time.

Also, it doesn't matter if the items are big or small, so the example of the 7 lines of text could be about just one item.
