In The Grapes of Wrath, cotton is the crop that is being grown on the Joad's farm. Cotton serves as a symbol of home and comfort for migrant workers who were accustomed to rather comfortably picking cotton back in their places of origin, hence many migrant workers wished to work as cotton pickers.
